Vermillion Snapper, White Snapper, Lanes, Strawberry Grouper – the reef's gonna be hoppin'. And if the stars align, we might even tangle with a smoker Wahoo. It's a long day on the water, but trust me, you'll be grinning ear to ear when we head for the dock.
We're not messing around with light tackle here. We're using stout rods, beefy reels, and enough weight to punch through the current and get down where the big boys live. Bottom fishing's the name of the game – we'll anchor up or drift over prime structure, sending down live bait or chunky cut bait to tempt those reef monsters. It's all about feeling that thump, setting the hook hard, and winching up dinner before it can race back to its hidey-hole. Red Snapper: The crown jewel of the Gulf. These crimson beauties can push 20+ pounds out here in the deep, and they fight like their tails are on fire. Best of all, they're delicious – flaky white meat that's perfect for the grill or fryer. Red Snapper season's always a hot topic, so we'll make the most of it when it's open.
Greater Amberjack: We call 'em "reef donkeys" for a reason. These bruisers will test your back and your gear. They hang around deep wrecks and reefs, and when you hook one, hold on tight. The fight's half the fun, but they're darn good eating too. We usually target them in the cooler months when they're most active.
Mahi Mahi: Also known as Dorado or Dolphinfish (not related to Flipper), these acrobatic fighters are a blast on light tackle. They're seasonal visitors, but when we find them, it's non-stop action. Look for that electric blue and green color – it's unmistakable. And talk about good eating – Mahi's hard to beat for the dinner table.
Wahoo: The speed demons of the Gulf. If we're lucky enough to cross paths with these torpedoes, get ready for some screaming reels. They're not an everyday catch out here, but when we do hook up, it's the highlight of the trip. Long, sleek, and striped like a tiger – Wahoo are the sprinters of the sea.
Lane Snapper: Don't let their smaller size fool you – these little guys punch above their weight in the taste department. We often catch them while targeting other species, but nobody's complaining when we do. They're a great "box filler" and make for some mighty fine fish tacos.

Seth took us on an 8 hour offshore trip where we caught our limit of Red Snapper and also had the opportunity to reel in Triggerfish and Amberjack. Colton the deckhand was phenomenal, and made sure we always had bait on hook and fishing. Great trip, great crew, and will be booking again!

Greater Amberjack are real bruisers, often reaching 3-5 feet long and 40-50 pounds. These powerful fish love structure, so we target them around wrecks and reefs in 60-240 feet of water. They're most active in spring and fall as water temperatures change. Amberjack put up one heck of a fight - they'll try to dive back to the bottom and test your gear. We use heavy tackle - 50-80 pound class rods and reels loaded with braided line. Live bait like blue runners or speedos works best, but big jigs can produce too. These fish make great table fare, with firm white meat. Here's a local trick: when you hook one, get it away from the structure fast or it'll wrap you up and break off.
Lane Snapper are smaller cousins of Red Snapper, usually 1-3 pounds and 10-14 inches long. You can spot them by their pinkish color with yellow stripes. We catch them over rocky bottoms and reefs in 60-180 feet of water. They're most active at night but bite well during the day too. Lanes are fun to catch on light tackle and make great eating. We use small hooks with cut bait or shrimp. These fish often mix in with other snappers, so they're a nice bonus when targeting bigger species. The meat is sweet and mild. Local tip: if you're catching small Lane Snapper, there are likely bigger fish below. Drop a larger bait down and see what happens.
Mahi Mahi are some of the most beautiful fish you'll see out here. They're known for their vibrant colors - blue, green, and gold that shimmer in the sun. These speedsters typically run 15-29 pounds but can get up to 87 pounds. We find them near floating debris or weed lines, often with frigate birds circling above. They're aggressive feeders and put up an exciting fight when hooked. Mahi are most abundant from July to November in our waters. To catch them, we'll troll at high speeds, around 12-15 knots, using wire leaders since their teeth can slice through mono. Fresh ballyhoo on a skirt works great as bait. The meat is excellent eating too - mild and sweet. Pro tip: If you see birds working an area, there's a good chance Mahi are feeding below.

The meat is excellent - white, flaky, and mild. These fish are highly regulated, so seasons are limited. Here's a tip: when you feel the bite, reel steady instead of jerking to set the hook. The circle hook will do its job.

The bite is usually a violent strike followed by a smoking run. Local tip: when a Wahoo hits, don't set the hook right away. Let it run for a few seconds to make sure it's got the bait, then hang on tight!
